Viridian Nutrition's Coconut Curry

This recipe comes courtesy of Virdian Nutrition whose Raw Organic Coconut Oil was a 2012 Organic Food Award Winner. A classic Indian curry often uses coconut flavours to enhance the spices. Rich in healthy fatty acids and a number of phytonutrient-rich spices, this recipe makes enough for four.

Coconut Curry2 tablespoons Viridian Nutrition's Raw Organic Coconut Oil
1 can of coconut milk
1 tsp chopped garlic
2 pinches of sea salt
4 large potatoes, peeled and chopped
½ large cauliflower, chopped
2 large courgettes, chopped
2 tablespoons curry powder
1/2 tsp ground cumin
1/2 tsp ground nutmeg
1/2 tsp ground ginger

Combine the curry powder, cumin, nutmeg and ginger in a bowl. Steam the potatoes for twenty minutes; adding the cauliflower for the last five minutes.

Heat the coconut oil in a large saucepan. Add the garlic and courgettes and cook until the courgettes soften a little. Add the steamed potatoes and cauliflower to the saucepan. Add the coconut milk. Stir in the spices and sea salt until the spices are fully incorporated. 

Enjoy this rich and delicious coconut curry with rice or quinoa.
