Grow Wild's Seville Orange Chicken
This recipe, from Grow Wild whose Organic Seville Orange Marmalade was a 2012 Organic Food Award Winner, is perfect for any feast, or light supper. Grow Wild suggest you have it with salad and potato wedges for a quick and easy slap-up supper.
2 organic chicken breast fillets, skin on (ours comes from Sascha & Hugh Grierson at Newmiln Farm, Perthshire)
2 heaped teaspoons of Grow Wild Organic Seville Orange Marmalade
½ teaspoon of strong mustard
½ teaspoon (or a little more) of your favourite grainy mustard
A good glug of Vermouth
A generous seasoning of Maldon sea salt
In a bowl, mix together the marmalade, mustards, vermouth and salt to form a marinade. Place the chicken in the bowl with the marinade and ensure it is well covered with the mixture. Cover and leave in the fridge for an hour or so.
Remove from the bowl and place in a baking tray, pouring any remaining marinade over the chicken. Cover with foil and cook in a preheated oven (225°C) for 20 minutes or until cooked. The cooking time will depend on the size of the chicken breasts. Less time will be needed if the chicken breasts are on the small side. Remove from the oven, remove the foil and grill until the glaze browns to give the chicken a lovely crisp glazed skin. When serving, pour over any juices remaining in the baking tray.
The marinade is also fantastic with thighs, wings and drumsticks and fabulous on a BBQ!
