Royal Blackburn Hospital Beef Stroganoff

Royal Blackburn Hospital, part of East Lancashire Hospitals Trust, achieved a bronze Food for Life Served Here award in May 2017 for their patient food, and staff and visitor restaurant, The Grane.

Head Chef, Michael, proudly presents this dish which is a popular choice on the patient menu, and available for staff and visitors in The Grane, too.


  • 1kg lean UK farm assured frying steak
  • 150g onions
  • 15g garlic puree
  • 5g thyme
  • 5g paprika
  • 375g mushrooms
  • 30g French mustard
  • 250ml double cream



  1. Heat a large non-stick frying pan over medium heat and spray with oil
  2. Cook the meat, in batches, for 3-4 minutes, stirring from time to time, until browned
  3. Remove from the pan, cover and keep warm
  4. Spray the pain with oil before adding onion, garlic and thyme to cook for 1-2 minutes; add the paprika and mushrooms, and cook for 3-4 more minutes
  5. Return the meat and juices to the pan with around 150ml water
  6. Cover and simmer for 5-6 minutes before removing pan from heat and stirring in the cream
  7. Serve with rice and vegetables
