Niomi Smart's Lemon coconut bliss balls

"One of my favourite things to satisfy my cravings is energy balls. The main ingredients provide a healthy balance of fats, proteins and carbs, plus provide a punch of nutrients- exactly what you need to get you through a long day. Keep in the fridge and take a couple on-the-go as a snack each day."
- 2 tbsp. coconut oil
- 90g desiccated coconut
- 1 tbsp. lemon zest
- 80g unsalted raw brazil nuts
- 1 tsp vanilla powder or 1 teaspoon organic vanilla extract
- 2 tbsp. maple syrup
- 3 tbsp. lemon juice
Set aside the coconut oil, 3-4 tablespoons of the desiccated coconut and the lemon zest. Blend the remaining ingredients in a food processor until combined. Add the oil and pulse until combined.
Roll into bite-size balls and place in the fridge for 20 minutes.
Sprinkle the 2-4 tablespoons of desiccated coconut and the lemon zest onto a plate and roll the balls on the plate until fully covered.
